Millstone flour
Our Boussay Mill has the largest collection of natural flint millstones in Europe (19). Our stone flours are renowned for their nutritional value. Containing more fibre than traditional grinds, their unique characteristics have an influence on the bread-making processes used by baking professionals. Traditional short-process methods produce flours that comply with the French National Health and Nutrition Plan (PNNS). The stone flours obtained retain the husk of the grain and therefore the nutrients, minerals and vitamins it contains. After the bread-making process, artisan bakers obtain larger, more colourful loaves.
