Minoterie Suire’s strongest commitment is undoubtedly its support for organic farming since the late 1970s. As a pioneer in the production of French organic flours, we didn’t wait for the industry to take shape before developing organic products.
Our millers work passionately to perpetuate the tradition of ancestral techniques to achieve excellence, in strict compliance with the specifications of our Organic Farming certification.

The cultivation of our raw materials, combined with our crushing techniques using natural flint millstones, mean we can preserve the nutritional qualities of our raw materials by optimising the incorporation of the germ – a real nutritional treasure. The main advantage is that it retains the vitamins, fibre and essential minerals our bodies need. Nothing like processed products and containing no additives, the flour produced by our special milling technique guarantees the preservation of almost all the noble elements of wheat for an exceptional nutritional balance.
From our rye flours to spelt and buckwheat flours, we bring out the best in their properties. By preserving the nutritional qualities of our cereals in our organic flours, we are promoting a healthier diet and affirming our commitment to society.

Every type of cereal has its own specific flavour and texture, and once processed is more specifically designed to make a particular type of bread, dough, biscuit or pastry. All the nuances of flavour can be found in the very wide range of organic flours we produce each year.
From wheat flours for authentic-tasting breads to barley flours made from this refreshing cereal that gives it a subtle nutty flavour, let’s not forget corn and rice flours, which once blended work wonders alongside the creativity of artisan bakers, pastry-makers and biscuit-makers.
While the technique of grinding on millstones is known to preserve the flavour of each wheat, more and more professionals are working with these flours to produce breads that are more aesthetically pleasing and have a stronger flavour. The lightly coloured flour gives them a strong character and the preserved germ gives them a nutty flavour. At the same time, their mastery of starters adds a touch of acidity to these exceptional organic breads.

Passing on and sharing our expertise
Under the impetus of the Girardeau family, Minoterie Suire has always been keen to pass on its expertise. The miller’s house, where the miller would originally watch over his mill, has now been turned into a bakery to provide a wonderful setting for the training courses run by Atelier m’Alice, such as the Organic and Sourdough CAP.
At the same time, our team of consultant bakers, made up of Compagnons du Devoir, Meilleurs Ouvriers de France and/or French Baking Champions, support our customers on a daily basis in their quest for improvement: optimising flavours, mastering starters and sourdoughs or introducing new recipes. As for our consultant bakers, they help bakery and patisserie professionals master their production processes.
Organic flours with quality labels and certification
In France, organic production and processing methods have always been a mark of commitment to the environment and the quality of the products they produce. Under European regulations since 1991, labels and certifications guarantee this high quality to meet the expectations of consumers, who are increasingly demanding and attentive to environmental and social issues.
The Organic Agriculture Label: quality and confidence
Long before the first single set of specifications for Organic Agriculture, Minoterie Suire specialised in creating organic flours. It was only natural that it should be awarded the AB label, which sets apart those involved in organic farming with no chemical or synthetic products or genetically modified organisms (GMOs). To get this label, you have to comply with strict specifications. It supports processes that respect the ecosystem and are non-polluting, and imposes systematic controls from production through to processing and distribution.
IFS FOOD certification
Our IFS Food2 certification is the highest qualification guaranteeing traceability and quality throughout the process. Minoterie Suire is the first of the “Moulins Associés” to have obtained this certification. Thanks to this label, its customers now include manufacturers and major French supermarkets, and it also exports to these same players internationally. IFS Food attests to our command of safety and hygiene standards for our flours. We are audited at least once a year and regularly ask our customers to respond to satisfaction surveys.
ECOCERT certifications
The ECOCERT certification body is the benchmark for organic and ecological labelling and is recognised by consumers. Minoterie Suire is approved for the certification of its organically-produced flours. It certifies compliance with the manufacturing standards imposed by the organic label and guarantees product traceability throughout the process. The certificates issued guarantee products that respect natural resources and use processing methods that have the least possible impact on the environment throughout the value chain.
The Agri-Éthique label, for fair trade in France
The Agri-Éthique label reflects Minoterie Suire’s commitment to society and its solidarity with those involved in the wheat industry. France’s first fair trade label ensures a fair income for farmers through a balanced approach between the added value of the farmer, the miller and the baker. The Agri-Ethics label also promotes animal welfare and respect for the environment, and supports farmers in their ecological transition. The aim is to secure the market and work in a climate of trust.
